The Coffee Cupping Process
Cupping, is a formal method used by coffee professionals to evaluate coffee quality. It’s a sensory experience that breaks down the tasting process into distinct, manageable steps.
Here is a step-by-step breakdown of what you can expect in our cupping classes:
Dry Fragrance: We start by placing freshly ground coffee in a cup. You'll lean in close to inhale the "dry fragrance"—the aroma of the grounded coffee before it's mixed with water. This first step helps you identify initial notes like floral, nutty, or chocolatey.
Pouring: Next, we pour hot, nearly boiling water over the grounds. We'll show you how to pour in a specific pattern to ensure the grounds are evenly distributed. As the water is added, a thick crust of coffee forms on top of the liquid.
Wet Aroma: Once the water is poured, you’ll smell the "wet aroma"—the smell of the coffee as it brews. The scent changes dramatically from the dry fragrance, often becoming more intense and complex. You'll learn to recognize how different aromas hint at the flavors to come.
Breaking the Crust: After a few minutes, we use a cupping spoon, and take a little bit off the top of the coffee, this is called “breaking the coffee crust.” As the crust breaks, a rush of aroma is released. This is a critical step for a professional taster and a highlight of the process.
Skimming: We'll then skim the remaining grounds and foam from the surface to ensure a clean tasting experience.
Tasting (Slurping): This is the most famous part of the process. You'll use a cupping spoon to take a loud slurp of the coffee. Brewing Methods: Finally, you'll master multiple brewing techniques. Our baristas will provide one-on-one instruction on popular methods like V60 (a classic pour-over), Aeropress (for a full-bodied, rich cup), Syphon (a unique, theatrical method), and of course, Espresso (the foundation of many of our most popular drinks).
