The Honey Process & The Heart of 787 Coffee

At the core of every specialty cup of coffee is our extrodinary process. Our coffee beans are grown and freshly harvested on our own farm, Hacienda Iluminada in Puerto Rico. We use the honey process, a traditional method where the coffee cherry’s sweet, sticky layer called mucilage is left on the coffee cherry during sun-drying. This careful technique naturally infuses the coffee with a unique, rich sweetness and complex fruit notes, creating the best coffee with flavors that explodes with every sip.

We roast our specialty Puerto Rican coffee beans to a medium roast, highlighting our origins flavors striking the perfect balance between our coffee’s dark chocolate, citrus, and buttery notes with a smooth body. Pour-Over: Clean & Precise

The pour-over method, using a cone dripper (like a V60 or Chemex) and a paper filter, is celebrated for its ability to produce a crisp, clean cup. This technique is so precise that it's the preferred brewing method for professional coffee graders and is even used in world coffee competitions. It's perfect for highlighting the natural flavors of our single-origin coffee.

History: The modern pour-over method dates back to 1908 in Dresden, Germany. A woman named Melitta Bentz, frustrated by the bitterness and leftover grounds in her coffee, punched holes in a brass pot and used a piece of writing paper from her son’s school notebook to create the first paper filter. Her invention was so effective that she founded the Melitta company, which is still a major name in coffee industry today.

How to Brew:

  1. Heat your water to 203°F-205°F.

  2. Grind 15 grams of your 787 Coffee beans to a medium-fine consistency (about the size of table salt).

  3. Place the decanter on the on the coffee scale and dripper with a paper filter on the decanter. rinse filter with hot water

  4. Add your ground coffee then lightly tap the sides to level the coffee bed.

  5. Tare the scale and begin to pour, starting at the center and working your way out, in steady circular motions make sure all the grounds are wet. Until you reach 50 grams for the “bloom.” This first pour should take 40 seconds

  6. Begin the second pour at 40 seconds until you reach 120 grams

  7. Begin the third pour at 1 minute 20 seconds and stop once you reached 190 grams

  8. Begin the final pour at 2 minutes, pouring to completion at 248 grams let it completely finish to drip.

French Press: Bold & Comforting

The French press is an immersion brewer that produces a full-bodied, robust cup of specialty coffee. Unlike filter methods, it allows natural oils and fine coffee particles to remain in the brew, giving it a rich texture.

History: The French press's origins trace back to France in the mid-1800s. The story goes that a Frenchman, brewing his coffee, forgot to add the grounds until after the water was boiling. He then used a metal screen to push the grounds to the bottom, discovering a simple way to create a clean, rich cup. While the design was later refined and patented by Italian designers, its popular name honors its simple, French beginnings.

How to Brew:

  1. Heat your water to 203°F-205°F

  2. Grind your 787 Coffee beans to a coarse consistency (like breadcrumbs).

  3. Add your coffee grounds, (two tablespoons of ground coffee per cup of water is the ideal measurement for an amazing cup)

  4. Pour in hot water, making sure to fully saturate all the grounds.

  5. Stir gently, place the lid on top, and let it steep for 4 minutes.

  6. Slowly and steadily press the plunger all the way down.

  7. Pour your coffee immediately to prevent over-extraction.

AeroPress: Versatile & Modern

Invented in 2005, the AeroPress quickly became a favorite for its versatility and portability. It uses air pressure to create a strong, smooth cup that can resemble a drip coffee or even an espresso.

History: The AeroPress was created by Alan Adler, a Stanford-educated inventor who also invented the Aerobie flying ring. He was simply looking for a way to make a cup of coffee that wasn’t bitter and had a quick brewing time. The AeroPress’s unique simple design and rapid brewing process caught on, and it’s now celebrated with an annual World AeroPress Championship.

How to Brew:

  1. Heat your water to 203°F-205°F

  2. Grind your 787 Coffee beans to a medium consistency (similar to table sugar).

  3. Place a paper filter in the cap and rinse with hot water.

  4. Add 15–18g of ground coffee into the chamber.

  5. Add hot water up to the desired level and stir for 10 seconds.

  6. Attach the plunger and wait 1–2 minutes.

  7. Press gently and steadily until the plunger reaches the bottom.

  8. The coffee that comes out is very strong, like an espresso shot. Add hot water to your cup to get the strength you want, or add milk to make a latte.
