Peaberry is the rarest coffee a farm produces. Normally a coffee cherry grows two flat beans pressed against each other. About one in a hundred grows a single round bean instead, called a peaberry, that takes all the cherry's sugars and nutrients for itself. We hand-sort them from every harvest at Hacienda Iluminada, our farm in the mountains of Maricao, Puerto Rico, and roast them separately. This 6 oz bag is the result.
What peaberry coffee tastes like
Because a peaberry is one dense, round bean, it roasts more evenly than flat beans and develops a brighter, sweeter, more concentrated cup. Ours is grown at 3,000 feet and honey-processed, meaning the sweet fruit mucilage stays on the bean as it sun-dries, so the sugars go straight into the coffee. Expect a fruit-forward sweetness up front, the dark chocolate and caramel that Puerto Rican coffee is known for underneath, and a smooth, full body with very low acidity. Medium roast.
Why it's rare
Peaberries are about 1% of any harvest. On a farm our size that's a few hundred pounds a year, hand-sorted bean by bean. When a harvest's peaberry is gone, it's gone until next year. That's why we cap subscriptions and why the bag is 6 oz instead of 12.

Peaberry shines in methods that show off sweetness and clarity. Pour-over (V60 or Chemex) and espresso are our favorites. French press works too, with a coarse grind. Use filtered water just off the boil, and grind right before brewing if you can. Whole bean keeps longest; if you don't have a grinder, choose the grind for your brewer and we'll grind it fresh when we roast it.
