Coffee Planting & Farming
Hacienda Iluminada, home of 787 coffee, grows its coffee beans on the fertile mountains of Maricao, where the climate and soil provide the perfect conditions for coffee plants to thrive. The farm uses a combination of traditional and modern farming techniques to ensure that the coffee cherries are of the highest quality making it specialty coffee.
The flavor of coffee is influenced by the terroir, which refers to the unique combination of climate, soil, and other environmental factors that affect the taste and aroma of the coffee. Each coffee-growing region in the world has its distinct flavor profile, making coffee farming a diverse and exciting field.
Puerto Rico’s temperate and tropical climate provide ideal growing conditions for coffee plants. The temperature and humidity level of the maricao region help in producing the optimal conditions needed to grow high-quality coffee beans. Our soil: The fertile soil in Puerto Rico is rich in nutrients and organic matter, an essential component of growing healthy coffee plants. This soil, combined with a large amount of rainfall, allows coffee plants to thrive and encourages the growth of our high-quality, single origin and specialty coffee beans.
Honey Processing
Once the coffee cherries are harvested, they undergo a unique honey processing method before being dried. This process involves leaving the sweet fruit pulp intact on the bean while it dries, which gives the coffee a distinct sweetness and fruity flavor. This method is time-consuming and requires meticulous attention to detail, but the result is a truly exceptional coffee.
Roasting
After the coffee beans are dried and hulled, they are then slow-roasted to perfection by Wanda, our female roaster. She uses a custom-made in america roasting machine that combines traditional methods with modern technology to bring out the unique flavor profile of each batch of coffee.
Sustainability
Hacienda Iluminada home of 787 Coffee also prioritizes sustainability in its farming and processing methods. The farm uses composting and other organic practices to reduce waste and maintain a healthy ecosystem. In addition, the farm provides jobs to the local community and helps to preserve the coffee-growing tradition in Maricao.
