Mastering Espresso: The 4 M’s Italians Use y el sabor que 787 Coffee le suma — A Puerto Rican Twist on the Classic Ritual

Let’s Connect on Social

Ciao coffee lovers!
At 787 Coffee, we don’t just sell beans — we grow them, roast them, and serve them with purpose. From our own coffee farm in Maricao, Puerto Rico to our vibrant shops in New York, El Paso, Puerto Rico, and soon Houston and New Jersey, we’re building something deeper than just coffee — we’re building a movement.

And today, we’re going back to where espresso became a ritual: Italy.

Because the Italians gave us a formula — a philosophy — that we live by to this day:
The 4 M’s of EspressoMiscela, Macinatura, Macchina, Mano.
(That’s blend, grind, machine, and hand — for the non-Italian speakers.)

Let’s break it down the 787 Coffee way, so you can make better coffee at home, learn more about the process, and fall even deeper in love with what’s in your cup.

Learn the Italian rule of espresso: the 4 M’s — Miscela, Macinacaffè, Macchina, and Mano — illustrated by Brandon Ivan Peña exclusively for 787 Coffee’s educational series.

1. Miscela (The Blend): The Flavor Foundation

In Italy, the blend is everything. Roasters mix beans from different origins to create balance — aroma, body, crema.

At 787 Coffee, we do it a little differently — and honestly, a little better.

We proudly grow our own 100% Arabica coffee on our farm in the lush, beautiful and tall mountains of Maricao, Puerto Rico. It’s shade-grown, hand-picked, and roasted in small batches so that every bag is loaded with island flavor. Micro-lots that help improve the quality of coffee but also take care of our planet. We also buy coffee from other Puerto Rican farms that care for coffee and sustainability.

But that’s not all.
For our infused coffees (like whiskey, rum, and mezcal) and our cold brew blends, we also collaborate with other specialty farms in Puerto Rico, Mexico, and Colombia — because quality and flavor matter more than borders. Latin@s supporting latin@s

Every origin we choose has a story.
Every bean we roast has a purpose.
And every blend we sell supports coffee farmers like us.

2. Macinatura (The Grind): Where Flavor Meets Science

Grind size is a game-changer.
Too coarse = weak coffee.
Too fine = bitter, over-extracted mess.

Espresso needs a grind that feels like fine sand — smooth, even, and ready to work under pressure.

At 787 Coffee, you can buy your beans whole (if you want to grind fresh at home), or choose the right grind for your brewing style — espresso, drip, cold brew, or French press.

We got you.
You just need to bring the curiosity and the caffeine cravings.

Our supremo coffee beans are roasted for 15 minutes and are medium to dark roast allowing a diverse and universal base to your extraction.

3. Macchina (The Machine): Pressure Makes Magic

Espresso machines are serious business — they push hot water through coffee under 9 bars of pressure and around 90-95°C. That creates the crema, the intensity, the soul.

At our 787 Coffee shops, we maintain our machines daily, tuning them like instruments to ensure every shot is consistent.

At home? You don’t need an Italian machine to make magic. A Moka pot, espresso maker, or even AeroPress can do wonders — as long as you respect the process. And use good beans.

Our beans shine in any brew method. Try them. We love coffee, we love the process of making coffee, we love what happens when humans drink coffee.

4. Mano (The Human Touch): You Complete the Cup

Mano = the hand of the barista.
In Italy, it means knowing how to tamp, time, and pull the perfect shot.

But at 787 Coffee, this isn’t just about skill. It’s about energy.

Our baristas are more than coffee makers — they are storytellers, artists, photographers, hosts. They welcome you, they caffeinate you, they connect with you.

And when you’re brewing at home? You become the mano.
You are the barista.
And with our beans — beans with culture, flavor, and purpose — you’ve already got the best start.

Why This Matters (And What to Do Next)

The Italians created the formula.
787 Coffee added flavor, heritage, and a whole lot of hustle. We added the farm, the working hands, the high pay for farmers, we added vertical integration of the bean - from farm to cup. From Puerto Rico to YOU.

We’re not just a coffee company. We are a farm, a family, and a community of humans who believe in quality, storytelling, and growth — from the first bean to the last sip.
